WOW! I love this dressing or dip from Food Revolution and Dreena. Use it for salads, fish, meat or anywhere you like. Enjoy this delicious and simple recipe.
PREP TIME 10 mins TOTAL TIME 10 mins
Ingredients 1 cup carrot (cut in discs) 1/3 cup raw cashews 2 tsp organic apple cider vinegar
1 small garlic clove 1/2 tsp fresh ginger root
A pinch of ground cinnamon 1/2 tsp ground cumin
1/2 tsp ground coriander 1/4 tsp ground fennel ( or cumin or ginger or any spices you like)
1/4 tsp salt
1/2cup water
Directions
Use a blender (a high-powered blender will give you the smoothest result) and puree all the ingredients until very smooth.
Taste and add extra vinegar if you wish, and season with additional salt if desired.
For a thinner dip, add extra water to achieve desired consistency.
Makes a little more than 1 cup.
